Ahhh, there’s nothing like Monday morning! The start of another week of magic, new beginnings, a fresh start. And what could possibly make for a better start to the week than a big stack of healthy, pretty and awesomely delicious waffles? The answer: not much.
I created these babies with the help of my gorgeous friend Caitlin (to whom I must also give photo credit), from these two recipes both on I Quit Sugar. I substituted the buttermilk for almond milk and used coconut oil to grease the waffle maker. You will need a waffle machine to make these. They are pretty cheap these days, about $15-$20 at Kmart or Target. However, if you don’t have a machine you can always turn them into pancakes.
Green Smoothie Pancakes (we just made them into waffles)
To make the berry coulis I simply threw some frozen raspberries and blueberries into a saucepan with a little bit of water and simmered for about 5 minutes, then blended it to a smooth consistency. We also caramelised bananas in coconut oil in a pan, with some rice malt syrup and salt to make a salty caramel sauce. Delish! Two half recipes serves 3-4 people.
