In anticipation of her first retreat Mum asked Peta and I to prepare some little goodie bags for the lucky people going on retreat. Needless to say we agreed without hesitation – any excuse to bake! In the end we made each person a little bag containing Walnut Bliss Balls and these fresh and delicious Lemon Almond Cookies! Luckily for us, there were just enough left over so that we could taste test (of course), and they are delish!
These cookies are gluten, grain, dairy and refined sugar free, plus loaded with all the protein and good fats from the egg whites and almond meal, so you don’t have to feel so guilty about downing more than just one in a sitting!
The recipe is from the amazing team at The Health Emporium (can’t wait to go there one day). We chose to add the zest of one lemon, as we have kilos of lemons currently in our kitchen. I also used a piping bag to achieve the small rounds that you can see in the picture, and Peta topped them with chopped almonds. We baked them for a little less time than the recipe says, just until they were golden brown and delicious.
