Chocolate Banana Pancakes with Cacao Peanut Butter and Strawberries

I was on the first morning of my juice cleanse (stay tuned for more about my juice cleanse this week) when Peta decided to whip up these bad boys – banana chocolate pancakes with cacao peanut butter and strawberries! Needless to say I had to use a whopping amount of willpower not to join her in devouring this tower of deliciousness. Peta has become a whizz in the kitchen and can take better photos of her food than I could ever dream of, and this creation was a testament to that. What’s even better is that these are clean, healthy, gluten, dairy, grain and sugar free and packed full of nutrients thanks to the banana, cacao and fresh strawberries on top. And according to Peta they taste like chocolate brownies… Can it get any better?! I don’t think so.

Choc Banana Pancakes

Chocolate Banana Pancakes with Cacao Peanut Butter and Strawberries

Ingredients:

  • 1 ripe banana
  • 1/2 cup almond meal
  • 1 Tbsp coconut flour
  • 1 Tbsp psyllium husk
  • 1 egg
  • 1/2 cup almond milk
  • 2 Tbsp cacao powder
  • 1 tsp baking powder
  • 1 tsp vanilla
  • Coconut oil, to cook
  • Mayver’s Cacao Peanut Butter
  • Fresh strawberries
  • Cacao nibs, to top (optional)

Method:
1. Blend all ingredients (except coconut oil) in a blender until smooth and creamy.
2. Cook pancakes in frypan with coconut oil over medium heat, until cooked through.
3. Pile up on a plate and drizzle peanut butter over the top. Top with strawberries and cacao nibs.

      Thanks! Psyllium husk is kind of like a pure fibre that can be used to replace eggs (obviously not in this recipe). You can substitute flaxseed/linseed meal instead :)
