This is another example of the fabulousness of raw vegan ‘cheesecakes’, which are actually packed full of things that are good for you. It is gluten free, dairy free, grain free, paleo-friendly, raw, vegan and sugar free! Although these types of cakes tend to be very high in fat, it is the good kind of healthy fats, which promote good health and vitality. The nuts provide plenty of these healthy fats, protein and minerals to help maintain blood sugar levels and promote healthy brain activity.

Cacao, one of the most potent antioxidant rich foods in the world (read more here), helps to prevent and reverse cell damage associated with ageing and disease, plus it is packed full of protein, magnesium, zinc and other essential minerals.

Coconut oil is also a super food in its own right, containing lots of special medium-chain fatty acids, which once again promote brain health and are even said to prevent diseases such as dementia. Coconut oil also contains vitamins that promote healthy skin, hair and nails, so much so you can actually apply it directly to these areas as a moisturiser.

Anyway, back to this fabulous cake, you should really make it. Now. Like, seriously go out and buy the ingredients you don’t have and make it. Trust me you won’t regret it (okay, maybe just a little when your cheesecake-induced food baby comes along).

Enjoy the last two days of 2013, cause they’re never coming back.

Keep healthy, Erica xx
