Raw vegan desserts are awesome. They are rich, delicious, but minus the sugar, refined flour and guilt of normal desserts. I myself am a huge fan of all things raw and vegan, despite following neither of these diets. Raw desserts are a great way to start moving towards a healthier diet without feeling deprived or like all you ever eat is vegetables (this is NOT true, healthy diets are way more than just veggies, although veggies are fabulous!). This cake is one of the simplest I have ever made, requires very few ingredients (compared to other raw cake recipes), and is ready after only a few hours of refrigeration. Even better, it is packed full of possibly my all time favourite superfood – RAW CACAO!
Raw cacao is basically the bean that chocolate (yes, chocolate) is made from. It is packed full of antioxidants, in fact raw cacao powder used in this recipe has the highest antioxidant content of any food on the planet. Raw cacao also contains a huge dose of magnesium, which is essential for overall health, heart health, mental focus and muscle recovery. Cacao is also a natural mood booster thanks to its neurotransmitter compounds that can literally give you a ‘chocolate high’.
