This is a very simple, healthy recipe that I whipped up when I spotted two over-ripe bananas in the bottom of the fridge, and personally, I think they taste pretty great. They are gluten free, grain free, sugar free, dairy free, pale and with a vegan option – perfect!
Paleo Banana Muffins
2 bananas, mashed
1 cup almond meal
1/4 honey (or maple syrup/stevia for vegan)
1/2 tsp cinnamon
1 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
1/3 cup oil (coconut, grapeseed)
Walnuts, to top
1. Preheat oven to 180C. Prepare six cup cake cases.
2. In one bowl mix all dry ingredients together, in another mix together wet ingredients.
3. Combine all together in one bowl, spoon into cases.
4. Place in oven and bake for 20-25 minutes, until golden brown on top.
