Even though we are heading into winter down here in the southern hemisphere, ice cream is always yummy and so I was delighted to find this recipe for ‘ice cream’, although it is more like a frozen banana smoothie. Who cares, it was delicious! It was also gluten, grain, dairy, sugar and egg free, vegan and vegetarian. After this success I am planning on attempting my own homemade coconut ice cream, then different flavours, but you will have to stay tuned for those adventures! Banana Ice Cream
2 bananas frozen and cut into chunks
1 TBS raw cacao powder
6 drops liquid stevia or sweetener of your choice
1 TBS almond butter
Almond milk to blend
1. Chop bananas into chunks and pop into freezer, until frozen.
2. Put all ingredients into blender and blend until creamy, adding more almond milk as necessary. Mine ended up in a kind of soft serve consistency.
3. Enjoy! It makes one very large serve.
