Coconut, Almond and Pecan Choc Chip Cookies

IMG_1719I have done it! I have made truly delicious, chewy, scrumptious, more-ish AND healthy cookies. Choc chip cookies are one of my absolute favourite foods in the whole world and so I was very happy when I mastered my Salted Choc Chip Cookies, see recipe here, but these are even healthier and dare I say it, possibly even yummier. Or as my sister said, “These cookies are even better than the junky, unhealthy ones!”

I found this recipe on a wonderful blog by the name of Health is Happiness, so check out the recipe and blog here. They are definitely one to try if you are gluten free and wary of the refined grain content of gluten free flour, as they are made with almond meal instead. The addition of chopped pecans also adds a great crunch. I highly recommend that you give these a shot, they are easy and delicious and very healthy (except for the choc chips). Or, try adding a few tablespoons (3-4) of raw cacao powder and omitting the choc chips (or keeping them, it’s up to you!) for these delicious and completely sugar and dairy free chocolate pecan cookies!

Coconut, Almond and Pecan Choc Chip Cookies

Dry Ingredients

2 1/2 cups almond flour
1/2 teaspoon Celtic sea salt
1/2 teaspoon baking soda
1/2 cup dark chocolate chips
1/2 cup shredded un-sweetened coconut
1/2 cup pecans, roughly chopped

Wet Ingredients

1/2 cup coconut oil
1 tablespoon vanilla extract
1/2 cup honey


1. Preheat oven to 180C.
2. Combine dry ingredients together in a bowl
3. In a separate bowl, mix wet ingredients together
4. Mix wet ingredients into the bowl with the dry ingredients
5. Form dough into balls and lay out onto parchment paper on a baking sheet then flatten out a little bit.
6. Bake for 8-12 minutes until slightly brown. Time will vary depending on oven. Keep a close eye.

Note: for vegan/dairy free cookies, use dairy free/carob chips instead of chocolate and for vegans substitute honey for maple syrup or agave, either should work fine.
