Apricot Balls

As you may have noticed I have been doing lots of cooking lately, so much so that I have a backlog of recipes to share with you! Anyway, todays recipe is another old favourite of my family; apricot balls. They are a great little afternoon tea snack to accompany a coffee or such. It is normally made with crushed tea biscuits instead of almonds/almond meal, but to make it gluten free I decided crushed nuts would be a good alternative. You could probably use any nuts or nut meals, or even gluten free biscuits crushed. As for the condensed milk it is not a healthy option, however I think coconut butter would probably work okay for a vegan or dairy free option. Here is the recipe, enjoy!

Apricot Balls

Ingredients:

250g crushed almonds or gluten free biscuits

125g dried chopped apricots

1/2 tsp vanilla

1 tin condensed milk (or coconut butter)

1/2 cup coconut + extra coconut

Method:

1. Combine all ingredients in a food processor. If it is too wet add more nuts, or if too dry add more condensed milk or coconut butter; it should be a doughy like consistency and sticking together.

2. Roll teaspoonful amounts into balls and roll in extra coconut until covered. Place in container and refrigerator until firm.
